Mix together the potatoes, corn, red capsicum, salt, red chilli powder and breadcrumbs in a bowl.
Divide into eight equal portions and roll into round balls. Stuff each ball with fresh pomegranate pearls.
Heat the oil in a non stick pan. Place the coarsely ground peanuts in a plate. Roll the stuffed balls in the peanuts and shape them into tikkis. Place the tikkis in the pan and fry till golden on both sides. Drain onto an absorbent paper.
Serve hot with tamarind chutney.
