1. Grind fresh turmeric with a little water to a smooth paste.
2. Heat a pan, add drained rice, bruised lemon grass, bay leaves, coconut milk and salt and mix. Strain the fresh turmeric puree into the pan.
3. Add two cups of vegetable stock, turmeric powder and let the mixture come to a boil. You can also add galangal if you wish. Cover and cook on medium heat till done.
4. Remove the bay leaves and galangal (if added). Tightly pack the rice in a conical mould, upturn it onto a serving plate and served garnished with fried shallots.
