1. Heat a kadai. Add coriander seeds, cumin seeds, bay leaves, cinnamon, cloves, black cardamoms, green cardamoms, black peppercorns and dry roast on low heat. Cool and grind coarsely.
2. Heat oil in a kadai. Finely slice the onions and sauté till golden. Add mutton and mix well. Sprinkle a little water, so that the onions do not burn and continue to sauté.
3. Add ginger-garlic paste and sauté till the colour of the mutton changes. Add salt and mix. Add 1½ cups water, cover and cook, stirring at regular intervals, for 20-25 minutes or till the mutton is tender.
4. Add turmeric powder, green chillies, yogurt and mix. Add the ground spices and mix. Add fresh coriander and mix. Transfer into a serving bowl and serve hot.
