1. Heat milk in a deep non-stick pan on medium heat. Chop basil leaves and add. Roughly chop pistachios and almonds and add. Add rice and mix and cook.
2. Peel the orange with a sharp knife and then cut into thin wedges. Add 1 ¾ tbsps brown sugar to the rice mixture. Add cream and mix well. When the mixture thickens, take the pan off the heat and set aside.
3. Heat another non-stick pan, add orange wedges, sprinkle castor sugar and a ½ tbsp brown sugar and cook for 1 minute. Cut the orange skin into thin slices and add and mix well.
4. Take the pan off the heat. Put the orange slices in serving bowls, put the pudding alongside, garnish with a few orange peel slivers and basil leaves, and serve warm or cold.
