1. Heat olive oil in a non stick pan, add onion, ginger and garlic and sauté for 1-2 minutes.
2. Add chicken mince and continue to sauté. Add salt, dark soy sauce, Hoisin sauce, sweet chilli sauce and mix. Cook till chicken is done. Transfer into a bowl.
3. Serve lettuce leaves, chicken mixture, carrot and cucumber separately so that each person can make their own rolls and eat.
4. To make the wraps place some chicken mixture on lettuce leaves, top with carrot, cucumber, wrap the lettuce around these and eat.
